Rosso Veneto I.G.T. “Don Carlo” - Varietal composition Cabernet Sauvignon (30%), Merlot (30%), Corvina (40%) - Appellation Veneto IGT - Region of origin Veneto - Vinification The vinification is carried out by slight pressing of the grapes and a long maceration on the skins. The fermentation is started up using selected yeasts at a controlled temperature and goes on for 15-20 days. The wine is then aged in large oak barrels for one year. Then it is stocked in steel tanks before bottling. - Colour deep ruby red with purple reflections - Taste full-bodied, dry, velvety and persistent - Bouquet fine, reminding red and wood fruits - Cellaring in a cool place, protected from the light, best enjoyed within 4 years from bottling in bottles stored horizontally - Culinary suggestions Ideal partner to half-ripened cheeses, roasted and grilled red meats and game - Serving temperature 18 - 20°C - Advice Open the bottle at least one hour before serving the wine - Alcohol content 14 % by vol. - Reducing sugars 6 g/l - Total acidity 5,5 g/l (as tartaric acid)
